
It all starts with the vine…
When producing BIOLOGIST wine, we deliberately forgot about the generally accepted rules. Finding our way, we created unique and unmatched wines!
We adjusted to the rhythm of nature to heal, not to harm. To increase the immunity of the vine and soil, we abandoned artificial chemicals like herbicides and pesticides, and began to use plant and mineral products.
For this purpose, we had to halve the volume of grapes and collect berries primarily considering pH. Only mature grapes and only undamaged berries. It is the main principle of our work not to react to circumstances, but to take up the running!
We understand the art of transformation through the natural processes of grape juice fermentation into wine. Therefore, we use sulphur and other products to combat the oxidation of grape juice and wine as little as possible. New oak barrels by themselves help handle wine antiseptically. For most wines, we carry out a long maceration (6–10 days) while adding dried crests. Spontaneous fermentation occurs in such wines as Pinot Noir, Merlot, Odesa Black, Rkatsiteli, Chardonnay, Aligote.
Our vineyards are located in Kyiv and Odesa Regions; our winery is located in Lisnyky Village, Kyiv Region.

A trip to the BIOLOGIST winery is not just another wine tour. It is an opportunity to literally visit the house of Ihor Petrenko, winemaker, get acquainted with the production and philosophy of Biologist as closely as possible, delve into the atmosphere of wine creation, and have a great time in the open.
What is included in the cost of the visit?
The cost of the tour is UAH 3 500 per guest, including dinner.
