It all starts with the vine…

When producing BIOLOGIST wine, we deliberately forgot about the generally accepted rules. Finding our way, we created unique and unmatched wines!

We adjusted to the rhythm of nature to heal, not to harm. To increase the immunity of the vine and soil, we abandoned artificial chemicals like herbicides and pesticides, and began to use plant and mineral products.

For this purpose, we had to halve the volume of grapes and collect berries primarily considering pH. Only mature grapes and only undamaged berries. It is the main principle of our work not to react to circumstances, but to take up the running!

We understand the art of transformation through the natural processes of grape juice fermentation into wine. Therefore, we use sulphur and other products to combat the oxidation of grape juice and wine as little as possible. New oak barrels by themselves help handle wine antiseptically. For most wines, we carry out a long maceration (6–10 days) while adding dried crests. Spontaneous fermentation occurs in such wines as Pinot Noir, Merlot, Odesa Black, Rkatsiteli, Chardonnay, Aligote.

Our vineyards are located in Kyiv and Odesa Regions; our winery is located in Lisnyky Village, Kyiv Region.

A trip to the BIOLOGIST winery is not just another wine tour. It is an opportunity to literally visit the house of Ihor Petrenko, winemaker, get acquainted with the production and philosophy of Biologist as closely as possible, delve into the atmosphere of wine creation, and have a great time in the open.

What is included in the cost of the visit?

  • A visit to the winery itself, which is actually located in the house of Ihor Petrenko, winemaker. You will be welcomed by Ihor Petrenko himself, the host and owner of the winery, who has been importing and exporting wine for 25 years, and winemaking for about 10 years. Knowing everything about wine, including its best world samples, he will become your perfect guide to the world of this legendary drink. Be ready to spend at least half a day (5-6 hours) at Biologist. It will be an interesting journey.
  • A tour to the terraced vineyards in the Kyrykove reserved area. Some of Biologist’s wines that are on sale are produced from grapes grown in the south—in Odesa Region. But you will be able to see and taste wines from experimental plots in Kyiv Region. The vineyards, as well as the winery as a whole, are very picturesque—you will want to take a lot of photos and videos here.
  • An interesting narration from Ihor Petrenko about the peculiarities of organic and biodynamic winemaking, which, in fact, is the goal of Biologist. What makes orange wines, which are so trendy nowadays, different? Why do biodynamists bury horns in the ground? What do they do with the horns next? Numerous interesting discoveries are waiting for you.
  • Lunch on the terrace with a gastronomic selection of dishes for Biologist wines. The owner of the winery will bake meat or fish for you, at your option, in his own open oven. There will also be Ukrainian cheeses, seasonal vegetables and fruits on the table—everything that best suits wines.

The cost of the tour is UAH 3 500 per guest, including dinner.
